On a narrow street in the center of Toulon, two small cast-iron tables can be found just outside the entrance to Emmanuel Davilma and Henri Kaced’s taqueria. Inside this space with unfinished walls and a communal table, dig shamelessly into their radically local, organic, plant-based menu. Just take the other day at lunch as proof: a tostada topped with fresh goat cheese from Puget-Ville, crisp cucumbers, cilantro and pickled black radish, served with a homemade flame-charred chili sauce – which also comes in a vegan-friendly version, with a chickpea cream instead of goat cheese; delicious tacos with carrots caramelized over the BBQ and a vegetable cream, or corn-flake-breaded zucchini; before another tostada – a sweet one this time around – combining corn-vanilla cream and roasted apricots. // Mathilde Moche
