Prélude, the generous bento spot, decided to take a break and lend its premises to Catherine Tabard and Julien Nève for a year so they could test out their concept: an organic and vegan eatery called TerTer. Their menu was crafted in collaboration with the epicurean Line Couvreur (Les Filles) and Emmanuel Gaspart (ex-God Save The Cream), showcasing the best of nature’s bounty: cep mushroom lasagna; roasted butternut squash halves, served with grilled tofu, ginger, miso and date cream; focaccia with glazed oyster mushrooms… and sides that definitely won’t wind up in the compost bin, like tangy leek and broccoli talus; lemony rice with chickpeas and cranberries; quinoa with cashews and za’atar… All of which are homemade, even the tofu, the star of the menu, that gets stewed up as vegan tamarind tofu meatballs in coconut milk and lemongrass sauce. In addition to all that, there’s a countertop overflowing with vegan sweets, Origin.Coffee java, and granola sold by weight for breakfast at home. On the weekends, come for brunch and their delicious TerTer savory potato waffles with hummus and veggies. Their success would suggest that a year-long test won’t be nearly enough! // Charline P.
FEELING THIRSTY? A selection of homemade drinks (nettle, blackcurrant and peppermint iced tea for €4, hibiscus kefir for €5 or cold-pressed juice of the day for €6.50), a few good bottles of red and white wine (a muscadet from Les Vignes Saint-Vincent, a cabernet franc from Sébastien David for €5.50 a glass), and some malted drinks, like the Frambo Sour by their Etterbeek friends at DrinkThatBeer (€5.50).
