After years spent running the luxury restaurant kitchens, cooking on yachts and fueling vacation resorts, nomadic chef Lander Matthieu has set down his pots and pans in Antwerp. With his beloved Eline Bisschop (the creative force behind January Flower), he’s launched Baroque Baroque, an event catering company, along with The Prep Kitchen, both housed in the same spot, right across from the prison. On the menu that day, enjoyed opposite the metallic open kitchen: a generous sea bass ceviche swimming in leche de tigre; lightly fried sourdough baguette from Domestic bakery, crowned with ground beef, basil, crisp endive, mint, peanuts, garlic and uber-crispy fried onions; then some magical French toast made with a thick slab of brioche, caramelized around the edges and squishy on its fermented milk-soaked interior, topped with a tangy rhubarb compote and an irresistible caramel syrup.
