Just a few meters behind the Heist seafront, lovers of good bread (and incredibly buttery rolls) queue beneath a green-and-white striped awning, hoping to beat the inevitable sell-out just two hours later. Who’s responsible? Bob, the house sourdough starter belonging to Yannick Daems and Ann Vallé, former drummer and fashion photographer respectively, who swapped their old careers for life in an artisanal micro-bakery. Open only from Friday to Sunday? That’s right. Because the rest of the week is devoted to feeding that lively starter, kneading dough and crafting loaves – without overproducing a single loaf. On the counter: spiced rolls, from the classics (cinnamon or cardamom) to more extravagant versions with caramelized pecans. Alongside them: apple crumble; açaí bowls, jam-slathered tartines, soups, Andy Roasters coffee and Ome matcha to enjoy on site before bagging a Multigrainzzz loaf (made with wheat, rye and spelt flours, plus golden and brown flax, sunflower, millet and poppy seeds) to fuel the week ahead.
