With a one-two step, Polka has set bellies dancing on Rue Jean-Pierre-Timbaud! In their bakery with a retro storefront, the Schpigels (Yaël, a science journalist in a previous life, and Julien, who used to work at Atelier P1) send processed flours flying: you won’t find anything but organic options here, starting with the sourdough polka breads with grid-like scoring. The space was properly made over by Nato Studio, in order to showcase their famous signature loaves (plain or pimped out with figs, walnuts and cranberries, etc.), surrounded by other pretty creations: rye loaves, corn, turmeric and pumpkin seed bread, tender shokupan (Japanese milk bread)… rubbing shoulders with some lovely apple turnovers, perfect chocolate and orange blossom babka, creamy vanilla flan… and strudel that’ll have you waltzing the polka! // Roberto Arenales
