On his menu? Fifteen cunning creations like the Baobab Swizzle, with its smoky sweetness (mezcal, Talisker whiskey, turmeric, quinoa milk and bitters, €14) or the sparkling No Secret For Victoria – mezcal, kombucha, hibiscus, lemon, Champagne and dried banana(€14). Otherwise, to avoid sombrero aches, opt for the Aqua de Jamaica, a delicate mixture made from cold-brewed hibiscus flowers and blue agave syrup (€5). // A.B.
