Saucisses has plenty of tasty options to get your tail wagging! Back in 2019, former corporate lawyer and Liège native Simon Bomans swapped his legal robes for a meat grinder, hiding out in his butcher’s workshop, stuffing casings all day long… Fast-forward to 2025 and he’s finally opened a bricks-and-mortar store of his own! Behind the windowed kitchen, the neo-charcutier continues to wield the mincer and sausage maker, churning out 100% homemade PQA-certified sausages (which stands for “Ardennes Quality Pork”), made from pedigree breeds and labelled with evocative names: the cheesy Blue Monday sausage combining Roquefort, gorgonzola and Danish blue into the mince; the Hispanic Moraira with chorizo and manchego; and the Italian-inspired Genova with fresh basil, Parmesan and pine nuts. Is Mr. Bomans slightly sausage obsessed? Yes, but not only that! He’s also a whiz at country pâtés and freshly-made américain (Belgium’s take on steak tartare) too.
