Formerly known as DrinkThatBeer, Matthieu Allain, Rémi Péquin and Adrien Dubois’s brewing adventure first began in a basement cellar. These days, the three friends produce ultra-local craft beers that Matthieu still brews himself. But that’s not all, they decided to go full throttle with the malt and hops and open La Bagarre, a laid-back bar that’s become the unofficial annex of the Institut Saint-Luc art school across the street. Inside their Saint-Gilles taproom, expect 440-millimeter servings that pack a punch, such as the bold 8.5% Bourre-Pif tripel or the surprisingly spicy 7.1% Jean-Paul chili stout. Soak up the lot with a few magical snacks, like the homemade poulycroc breaded chicken sticks, while enjoying the 100% DIY vibes – right down to recycled beer cans, repurposed as planters for cuttings. · Emile Marnac
