Pascal Paulze has uncorked more careers than most people have bottles! Twenty years as a sommelier at some of France’s biggest names (Daguin, Loiseau, Raimbault), before earning the prestigious Meilleur Ouvrier de France title in 2015; several seasons overseeing the cellar at Domaine de Barbossi, between the Mediterranean and the Estérel massif; and now the cheerful owner of a wine bar in Cannes, evangelizing natural and biodynamic bottles, and always ready to uncork one of the 300 labels chilling in his colossal custom-built fridge. To go with the wine, his business partner (and chef at Uva) Étienne Mantel has been plotting some small plates: crab with lobster-oil mayo, vitello tonnato, cheeses from Mons in Le Cannet and a truffled croque-monsieur… Best enjoyed around the long communal table, up on the mezzanine or perched at a high stool on the terrace. · Agatha Crispy
