Chef residencies at Sens, the culinary project from Cassandre Caudan, Jeff Branchu and Charles Gamon, just keep coming! After Baptiste Trudel (from TV’s Top Chef France), Peruvian chef Paulo Santiago and Valeriya Hyschchenko from Ukraine, it’s Arles-based star chef Numa Muller’s turn to take over the big open kitchen of this spot with minimalist decor and sleek design (off-white walls, polished concrete flooring, a stainless-steel-clad kitchen, wooden chairs and tables), located far from the glitz and glamour in a less touristy part of Cannes. The night we went, we had all of the following: luscious leeks with labneh and ponzu sauce, pimped out with crispy panko breadcrumbs and mustard greens; flavorful wolfish crudo seasoned with rayu (spicy sesame oil), kohlrabi and lemon; incredible focaccia served with a divine taramasalata for dipping, plus smoked herring roe; line-caught Mediterranean amberjack that was perfectly flash-seared, paired with delicious chard, celery and confit Kalamata olives; scrumptious veal rump with carrots and radishes; before a selection of local cheeses or a comforting panna cotta with meringue, poached pears, fennel and preserved citron. // Lenny Vega

FEELING THIRSTY? A wide variety of living wines: an Alsatian white from the Domaine Leipp-Leininger (€9 a glass), a Saint-Joseph red from Pierre Gonon (€149 a bottle) and a Jura red by Les Bottes Rouges (€70).
PRICE: Amuse-bouches €8-9, appetizers €12-18, mains €23-32, risotto €80 (to share), desserts €10-14.

Hopopup! Because sometimes wiping the slate clean is the best way to fill it back up again, this restaurant hosts a chefs-in-residency program. So it’s possible that when you visit, a new talent may have taken over the kitchen!
