Hence his extremely spot-on selection, combining Southern wines (Fabien Jouves, Simon Gastrein, Marcel Richaud) and wines from other regions – a Mâcon-Villages from the Bret Brothers (€19), Reliance Champagne from Franck Pascal (€43), a Bourgeuil from the Bretons (€20 for a magnum)… Plus, there’s beer from the Brasserie Artisanale Arlésienne (€6.80 for 700 ml) or Ferroni rum (€56 for 700 ml), plus Très Cochonne pork terrine from Teyssier to sponge it all up. // Gwen Jacquère
