Guillaume Geniez’s shop is a like a sea of wines, filled with fermented and distilled juices chosen by a man who’s been immersed in this world since he turned 18. In addition to his 1,800 labels, including 200 non-wine options, the caviste had the brilliant idea to get educational with his customers, labelling his organic and natural wines (a sizable part of his collection) with little green stickers, even mentioning the years and varietals.  Even more impressive are the prices of all the bottles from the Roussillon department (and the southern Languedoc), sold at winery rates! You’ll find Llum, a grenache gris / macabeu blend from Le Roc des Anges for just €26.40, Les Glacières, a blend from the Domaine Gardiés for €18, Emmenez-Moi au Bout du Terret, a very rare terret blanc from Le Clos du Gravillas for €14.60, or even La Noia, a grenache noir from Le Clos del Rey for €14.80. But wines from other regions are well represented too, including Tissot in Arbois, Guiberteau in Saumur, Maxime Graillot in Cornas, and Sérol in Côte-Roannaise. And if you were born in 1936 (bravo), there’s a natural sweet wine from the same year that might interest you. // Adrien Nouviaire
