Resolutely set on feeding the Saint-Cyprien neighborhood the right way, Romain and Clément Peronne don’t cut corners when it comes to pizza: flour straight from Lombardy, dough given a full 72-hour maturation (non-negotiable), 100% Italian ingredients – and basta! In their gluten-fueled lair, stamped with bold blue lettering and buoyed with an atmosphere as light and pillowy as their dough, the Perpignan-born brothers turn out Neapolitan classics with quiet swagger: like the Margherita with a bright, tangy San Marzano tomato sauce, or the Pesto combining stracciatella, creamy pesto, toasted pine nuts and sun-dried tomatoes. They’re not above a clever plot twist, either: the Formaggi pairs apricot jam with a quartet of Italian cheeses (ricotta, mozzarella, parmesan, gorgonzola) and a scatter of slivered almonds, while the Toulouse-style Salsiccia brings things closer to home with local sausage and caramelized onions.
