Opposite the Viguerie port – the pulsing epicenter of the vibrant Saint-Cyprien neighborhood – David Torelli and Mickaël Sauvage (founders of Vivant and Les Assoiffés) have joined forces with sommelier Xavier Baelde (ex-Tire-Bouchons) and chef Gaëtan Helleboid (former sous-chef at Vivant) to deliver a brand of modern bistro cooking where pristine produce hogs the spotlight. In the vast dining room – all red brick walls and terracotta tiles – or on the small terrace gazing over the port, plates glide out with effortless ease. That night: line-caught albacore tuna sashimi lounging on piquillo pepper gazpacho, perked up with peach and grilled peppers; followed by vegetable minestrone with chickpeas and fregola sarda, swimming in a flavorful tomato broth, slicked with a swirl of basil pesto and crumbled ricotta salata; before awakening the palate with a dazzling raspberry clafoutis topped with a citrusy crumble and raspberry-tarragon sorbet, for a sharp, bright finale.
