Opposite the Viguerie port – the pulsing epicenter of the vibrant Saint-Cyprien neighborhood – David Torelli and Mickaël Sauvage (founders of Vivant and Les Assoiffés) have joined forces with sommelier Xavier Baelde (ex-Tire-Bouchons) and chef Gaëtan Helleboid (former sous-chef at Vivant) to deliver a brand of modern bistro cooking where pristine produce hogs the spotlight.
