Manuel Barthelemy’s certainly got things spinning! After winning multiple awards in France and abroad for his ethical pizzas, this Luberon baker treated himself to a luxurious rotating wood-fired Ephrem oven (manufactured in Provence). The results? Crispy pizzas that are magnificently topped with organic, local and sun-kissed ingredients. Seated on the immense, eco-friendly terrace built by local carpenters, the day we went for lunch we nibbled on: focaccia and pita served with homemade mezze (gazpacho, tzatziki, tapenade and eggplant caviar); before a vegetarian pizza with sun-dried cherry tomatoes, balsamic caramelized onions, a sheep’s cheese and mint sauce plus arugula; then an indecent chocolate-nocciolata tart. Also worth trying: the bergamot or ginger panettone, the chef’s other specialty, and the Pizza Sound System evenings, so you can spin around as quickly as a Neapolitan pizza being tossed about by Manuel! // Cléo Tangerine
FEELING THIRSTY? Priority goes to local, organic wines: Tout feu tout femme, a red from the Vaucluse winemaker Laura Aillaud (€30 a bottle), Verdon Daï!, a rosé from Myrko Tepus (€25), Pur, an Aix white from the Château Revelette (€24), along with craft beers from the Luberon (€6 for a pint).
