To find the new smash burger hotspot from Tom Degroote and Pieter Vermeersch, just follow the clamor on Sint-Jansplein! Barbecue heavyweight Tom (of BBQ TV show Open Vuur) and his cohort Hendrik Dierendonck have landed, serving up patties that are crispy on the outside, juicy and fatty inside, aged six to eight weeks – exactly how we like them. On the menu? Five different burgers, all available as vegetarian options, including the Seoul Supreme, a double-patty, double-cheddar delight nestled in a sweet potato flour brioche bun, layered with punchy gochujang mayo and homemade kimchi – for an umami double whammy! Pair it immediately with fries dusted in smoked coffee salt and miso mayo, or the ultra-crisp coleslaw with a hint of makrut lime. FEELING THIRSTY? Around 15 natural wines: Bergecrac, a mineral white from Château Barouillet (€6.50 a glass), Petard, a red from François Ducrot (same price) and an orange wine from Heuvelland, made with sauvignon gris and solaris (€38 a bottle).
