At the helm of the turbo-charged TurboMachine, a long, narrow coffee shop just steps from Place Saint-Pierre, Guyanese-Greek Elis Paul-Julian (ex-chef at Minifundi) fuses her roots with a love of anglophile eats and Levantine flavors, spinning out soul-food plates that seriously bring the groove. Her co-pilot, Charlotte Palm (former head of design at Big Mamma), has dressed the walls in punchy screen prints – pops of color framing high-octane dishes built to kick start your day from 10:30am sharp. That morning? Unapologetically handsome spicy pancakes crowned with two fried eggs, crisp maple bacon, chili oil and a peanut-sesame crumble; Turkish eggs with cream cheese, braised spring onions, infused oil and homemade pita bread for scooping every last swipe. And because restraint is overrated: thick chocolate ganache slathered on French toast, ice cream cookie sandwiches, cassava-flour tahini halva or cinnamon babka rolls. These natural mood enhancers will have your blood sugar soaring from the very first bite! Specialty coffees by Minifundi (€2 to €4.50), homemade soft drinks (€4 for lemonade), Vedett beer (€4.50 for 250 ml) and sharp little edit of natural wines: Le Paria, a grenache from Maison Ventenac (€6 a glass, €26 a bottle), Négrette, a pét nat from Domaine Le Roc (€6-€28) or Super Singla, a skin-contact muscat petit grain from Domaine De Mena (€31).
