Happy be the chef, Nick Hofman, who never gave up his love of ramen. Honed in the kitchens of Yokohama, his art of concocting smoking-hot broths brings comfort to a slew of in-the-know regulars and Japanese enthusiasts around a large, angular counter, where its tsuru-tsuru a-gogo! During our last visit, after a few gyoza (chicken and vegetables), we tucked into: a juicy, crispy karaage chicken thigh served with a totally delish miso mayo; before choosing from a dozen options (including veggie and vegan versions), a Spicy Miso ramen in yummy umami broth, ignited by chili and topped with to-die-for chashu (braised pork belly), bean and bamboo sprouts, marinated soft-boiled egg and sweetcorn, not to mention the stars of the show, those magnificently chewy and super-soft noodles.
