Unlike nine out of 10 households since lockdown ended, at Brood (which means “bread” in Flemish), their sourdough starter is very much alive! And since they can’t be in two places at once, Sarah Cnudde and Louis Devos quit their jobs (the former used to work in the art world, the latter in communications) in order to shape, knead and bake fulltime. In their cute bakery with an OSB wood facade, the duo offers up a very short selection of five different breads: one made with einkorn flour and salt from Noirmoutier (€5.50), another made with a mixture of rye flours (€4.50), yet another with sunflower, pumpkin, two types of flax and sesame seeds (€4.20)… And each month, an ephemeral creation takes center stage, like the star of the moment the last time we went, a country loaf with fresh figs that was still fresh five days after purchase!
