Having struck out on her own, pastry chef Fanny Payre hasn’t lost her magic touch that made Tapisserie‘s fanbase explode. Just ten doors down from Fournil Ephémère (run by her partners Thibault Dellessard and Emmanuelle Delessard-Gasnier), her bright orange-tiled storefront lures you in with perfectly buttery croissants and pain au chocolat (made with Xoco chocolate), dreamy palmiers and brioche filled with rhubarb-raspberry compote and meadowsweet cream. Come lunchtime, pamper your palate with focaccia loaded with sliced potatoes and smoked peppercorn raclette. And for an afternoon pick-me-up, there’s sweet clover-infused flan, a wonderfully tart satsuma mandarin cake, or a perfectly balanced puff pastry tartlet layered with olive oil cream, honeyed fig compote, fresh figs and pollen granules. So many good reasons to stay loyal to Fadoli! // Scotty Lard
THE HIDDEN GEM: The cream puff, oh-so decadent with its 63% chocolate ganache and crunchy peanut praline, nestled in a cloud of peanut mousseline cream studded with caramelized peanuts (€5).
