Feeling a sense of déjà vu? Back in 2016, Bertrand Auboyneau added the final crown jewel to his bistro dynasty on Rue Paul-Bert (Le 6, Bistrot Paul Bert, L’Écailler du Bistrot). This prestigious wine shop, surrounded by so many seasoned sommeliers, boasts an ever-changing lineup of chefs in residency to complement the wine selection (Hanz Gueco, Romain Lamon, Akira Sugiura and Jack Bosco Baker have all passed through its kitchen). Currently, it’s been entrusted to wine maven Chloé Colin (ex-Jones and La Vierge), who expertly shares her knowledge with guests seated on high barstools in a candlelit space, where the blackboard menu is brimming with standout wines: Magic Juju, a classic chenin, sauvignon and muscadelle blend from the Domaine Mosse (€8), Terre de Feu, a carignan, grenache and mourvèdre from Roussillon winemaker Jean-François Nicq (€32 a bottle, corkage fee included), Hamac, a blend of red and white varietals by Sébastien Chatillon in the Gard (€37.50), or a gamay, poulsard and trousseau blend from Raphaël Monnier in Arbois (€60)… A wine bar where you’re somehow always thirsty for more! // Angela Dolu
