When you bite into some of their Comté aged for 18 months, you’ll quickly understand why Nicolas De Mesmaeker and Besa Balisha’s cheese shop, located along the Parc Josaphat, is called Le Goût (“Taste”). That’s where you’ll find the crème de la crème of Belgian, Swiss, English and French cheeses, which come together to create lovely cheese platters, featuring gems like the tomme cheeses from Stavelot and the Larzac, the fruity, farm-fresh morbier or even the Coeur Gourmand from the Périgord, a small, fresh goat’s cheese stuffed with fruit compote (fig, lemon, apricot). What about the staff? They’re as tender-hearted as an Italian Le Tur three-milk cheese! // Julie Méaux

The hidden gem: The truffled Barisien, a triple cream cheese from the Meuse, which seems to melt on your tongue just by looking at it (€42.90/kg).
