Côme Desgrées du Loû and Guillaume Rabel were fed up with the worlds of international relations and business law. So instead, after attending the École Nationale Supérieure des Métiers de la Viande, they decided to shake up Nantes with two butcher shops featuring meats exclusively sourced from farmers they know personally. Behind the pale green facade of the shop on Rue Saint-Léonard, their beasts (beef from Nantes, lamb from Brittany, sheep from Vendée, pigeon from Mesquer, Coucou de Rennes chickens from Rennes, porc noir pigs from Gascony) are butchered whole and beautiful cuts are displayed in the windowed cold room.
