A small village square, a few sunny tables, a big table d’hôte, organic bottles of wine… and this certitude: happiness can be found in the wine cellar! More specifically, that of Christine Cannac, a pioneer of clean wine in the Hérault department, who traded in her job as a sommelier at fine dining establishments (at Pierre Gagnaire’s restaurant, most notably) for the more atmospheric apéro hours. Good advice is never in short supply, and this ambassador of low intervention regional wines never misses an opportunity to unveil her prized bottles: Les Claparèdes, a red from Vincent Augé (€17), a Chardonnay from Gaël Jouvet (€11.50), Grand Carré, a white from Le Mas d’Agalice (€13)… Not to mention a few names from the surrounding area, like Yannick Pelletier, Didier Barral, Jean-François Coutelou… Take it all to go or have a glass on the terrace, paired with some honest apéro platters. // Pop

The bullet-proof bottle: Symbiose, a local red from Le Mas des Mesures (€17.50).
