The place to eat & drink in Sète? It’s Tempo, an atmospheric restaurant/bar run by Pierre Belmont and Olivier Guitton, along with chef Mickael Stewart. It’s equipped with an impressive Palladium sound system, a large terrace, custom-made furniture by Pauline Bonard & Hugo Caillaud, plenty of space to store vinyls and spirits, plus Japanese-style eats. The night we went, we savored all of the following: cauliflower, radish and mushroom pickles, plus cucumber in a garlic and sesame seed marinade; comforting karaage chicken with sriracha mayo; lovely bluefin tuna tataki coated in rosemary gomasio; incredible mackerel with flame-charred watermelon and tomato, plus yuzu kosho; and best of all, some delicious amberjack sashimi seasoned with Tosazu vinegar, bottarga and grated macadamia nuts; and for a final sweet touch, a light sake-poached pear with matcha cream, and a ginger-lemon cookie. // Nour Passages
FEELING THIRSTY? : Plenty to keep the good vibes going: cocktails (Aqua de Beber that combines tequila, mezcal, lime, grapefruit soda and bitters, €12), sakes (Le Vent or Le Tonnerre from the Domaine Les Larmes du Levant, €3 for 30 ml) and a few living bottles (including a Beaujolais chardonnay from the Famille Chasselay at €35).
