If you’re in need of some briny flavor from the Hérault department, head to Le Saint Barth’ on the Étang de Thau! Behind the somewhat cheesy name is the Tarbouriech family (who have been in the oyster farming business since the 1960s), who run this big, chic cabana on a pontoon facing the Thau oyster parks. The other day at lunch, we gobbled up three meaty, balanced n°3 Tarbouriech® oysters; six more modest n°1 Bouzigue oysters; a good basucade – a big salad bowl filled with mussels cooked on the BBQ and bathed in a secret sauce made with garlic and tomatoes; before a Snickers ice cream bar for dessert, since the dessert delivery wasn’t able to be made the day we went… // G.LeP.
