Summer and winter alike, Antoine Pirot makes Sète shiver at his tearoom with blue-hued walls, paneled in exotic wood, not unlike the interior of a sailboat. When the weather’s nice, the former carpenter churns out perfect organic sorbets and sculptural ice creams, flavored with coconut, salted caramel, pomegranate, sea buckthorn or even fig. And well before the first snowflakes fall, there are warm waffles and visually elaborate frozen creations: a Malaga spiral with a white rum mousse insert and pine nut nougatine, or a more classic but still irresistible Baked Alaska. What did we have? Two scoops, one of black sesame and the other lavender honey, savored with a delicious Si Bio juice.
