Arthur Chiapello, the co-founder of Massale and Aglio e Olio in East Paris, is shaking things up by converting wine lovers in the Grenelle neighborhood of Paris to the concept of naturalism. From behind his tiled bar lit up by neon green lights, he unveils a sharp selection of sulfite-free wines, which you can pop open in house: La Part du Colibri, a Nantes Gamay produced by Vincent Caillé (€6 a glass); a Rhone Grenache Syrah blend from La Ferme des Arnaud (€24 a bottle); a Mauzac, Loin de l’œil, Muscadelle blend from Causse Marines in the Tarn (€32)… All of which is supplemented by craft beers from the surrounding area available on tap, like the Presse-Framboise from the Brasserie du Grand Paris (€8 a pint). And for the grub, you’ll find a wave of Basque products: taloa (corn galettes) with country ham and Comté cheese, a cheese and charcuterie plate from Ospital served with bread from the neighboring Panade bakery… // Henriette Ma
