THE STORY: Guy, the Parisian, and Gauthier, from Brussels, have restored this fortified farm near Uzès to create THE guesthouse in which they themselves would like to stay. The result: stony rooms with modern lines, a sumptuous heated pool, a hammam, a Mediterranean garden and an organic vegetable patch—the kingdom of Gauthier, a fine chef, who runs the communal table at lunch as well as two nights a week (every evening from June 18th to September 17th).
