The mercury’s sure rising over on Rue des Brasseurs, where hot, new tasty spots are spreading like wildfire. And just like that, 90°C caught alight, at the speed of a TikTok trend. It’s the second spark for Joseph Cassart, who’s also the chef at the scorching Petit Pays, a few doors down. Named in reference to the decade he was born in, 90°C (pronounced “nonante degrés,” Belgian style) also reflects the ultra-local seasonal crops and produce harvested from Joseph and his friends. We’re set ablaze by the spinach and basil pappadardelle topped with crumbled feta and ricotta, which leaves us practically licking the plate clean; shitakes and oyster mushrooms from Gembloux pan-fried with garlic and doused in a full-bodied jus; organic Ondeval trout gravlax with beetroot and cilantro; and the insanely good lavender tarte Tatin with white chocolate caramel and a Florange-infused crème pâtissière. Another option: grab a drink with some snacks like Belgian coppa, local oeuf mayo or seasonal veggie hummus before the heat of the action begins. // Jessica Fletcher

FEELING THIRSTY? Brase, a lime tree wheat beer brewed by Bertinchamps in Gembloux, in collaboration with around 10 young restaurateurs from Rue des Brasseurs (€5 for 330 ml), a homemade beetroot shiso soft drink (€3.50) or an aromatic rosemary Ginmay gin and tonic for a super-fresh aperitif (€9).
