A big, shady terrace that’s always packed, a wood-clad space both inside and out, a bright dining room and a refrigerated display case of dry-aged beef… That’s the vibe at this bistro located halfway between the beach and the Gujan marina. Who will you find in the kitchen? Nicolas Vallois (ex-Chardenoux, Ischia), serving up a lovely bistronomic menu that’s sourced as locally as possible (the Aiguillon fishmonger, the nearby Servat cheese shop, etc.). The day we went for lunch, we had all of the following: a very graphically pleasing and flavorful jammy oeuf mayo served with a perfect cos lettuce and celery rémoulade, with lots of mustard and a masterful verjus mayonnaise; grilled octopus in a happy surf ‘n’ turf marriage with braised chuck steak glazed in its syrupy jus de viande, and served with an incredibly creamy polenta dotted with toasted corn chips; before a remarkable rum baba with silky orange blossom cream and an audacious ras el hanout ice cream. // Marcellin Caillou
FEELING THIRSTY? Lovely cocktails available with or without alcohol (€9-15), and carefully chosen wines from Gironde and further away: Haru, a white from the Domaine Henri Milan (€7.50 a glass), Lola, a white from the Château Masserau (€55 a bottle), or a Côtes-de-Bourg red from the Château Philosophe (€39).
