Does everything have to change for nothing to change? Ever since Delphine Zampetti left her beloved shop to sail on down to Basque Country, her former sous-chef Tiphaine Moindrot (ex-Dauphin) took the reins of this iconic former horse butcher’s shop turned neighborhood sandwich shop. You’ll still find the same red and yellow tiling, and the same winning duo of outstanding sandwiches and old-fashioned salads that can be taken to go or devoured at the small bar. The day we went for lunch, making sure we could keep coming here on a regular basis, we opted for a slice of deliciously runny Spanish tortilla; new potato salad with perfectly spicy chorizo; then a freshly made sandwich of course, combining pork loin, guacamole and carrots on a fresh baguette. And to round out our meal, a rhubarb fontainebleau that was as light as it was delicious. The legacy lives on! // Jean Pascal
