Nice was lacking a truly stellar shellfish spot! At least until Nicolas Bouchet, an EDHEC alumnus and the son of Patrick Bouchet, an oyster farmer on the Étang de Thau, tackled the problem head on. With the support of Hugoric Gallet, he opened this oyster bar back in July 2023, the Nice branch of his father’s restaurant La Grande-Motte. Freshly plucked from the salt water: the famous Bouchet oysters raised exclusively using exundation techniques (artificial recreation of the tides), divine razor clams (served marinated or plain), palourde clams, whelks, and the house’s signature scallops (from Peru!) seasoned in a spice marinade, plus brown crab, langoustines and lobster (sourced from Ireland, Normandy or Brittany) with homemade aioli… served on their own or as part of a platter. // Laëtitia Sayre
