When Punjabi cousins Tejinber Saram and Balvir Chahal decided to tell their story (dastaan in Hindi), the result was a manifesto for a cosmopolitan India, a far cry from the usual kitsch and tikka masala clichés. Forget golden lanterns and velvet curtains, here chic understatement reigns, with Klein blue walls, crisp white tablecloths and lush green plants. And what’s on the plates? Fresh Indian street food that doesn’t hold back on aromatic spices: crunchy cumin poppadoms; vibrant papri chaat – a sort of cold potato and chickpea salad with pomegranate, fried crackers, sweet chutneys and crispy vermicelli, a feast of textures and contrasts; dabeli, just like in Gujarat – a mix of potatoes, chickpeas, peppers and red onions, served in a brioche bun, topped with fried shrimp and an addictive mint, cilantro and turmeric sauce. And to top it all off, gulab jamun – spongy dumplings made with powdered milk, which are then fried and soaked in sticky rose syrup. · Lina Megalinia
