“Wine” and “bistro”: two words, one idea. At Django, they’re taken both literally and loosely. Come for a meal, come for a glass, come for both – nobody’s keeping score. That’s the philosophy of the two friends behind the project, Pieter Van Mele (a seasoned wine pro turned sommelier) and Louis Van Goethem (an enthusiastic home cook turned bona fide chef). They’ve poured it all into a corner unit in a 1970s building, with sun-drenched fabric banquettes up front, and marble tables, black chairs, burgundy walls and colorful cushions tucked away at the back. On our visit: fresh artichoke for dipping into a sharp shallot and chive sauce ravigote; Thai curry with chunky celery, tender Swiss chard and crisp fried dogfish (preferred over the country sausage that day); and for dessert, silky sabayon cascading over a scoop of vanilla ice cream. · Mina Perlemousse
