In the middle of all the Asian restaurants that populate the Cimdix neighborhood, there’s a small eatery that will really throw you for a loop! All thanks to their flavor-packed bowls of broth filled with fat hui mian noodles, typical of the Henan province in China, made by hand in the open kitchen. After a bowl of vegetables and herbs dressed in a vinegary marinade seasoned with Sichuan pepper to heat things up (we can happily oblige that slight deviation), it was time for the main event: subtle yet sharp broth featuring the aforementioned noodles with sliced beef shank, mushrooms and vinegary cucumbers. Before the brothless versions (caramelized pork, spicy ground beef), which are also worth exploring. Our conclusion? You’d better get slurping! // Léa Cruz
