Georges Baghdi Sar is unstoppable! With his My Tannour empire (which boasts five locations) and his restaurants Mine Madeh and Kamoun, the Syrian chef isn’t done spreading the flavors of the Levant across the Belgian capital. So seated on one of Kamoun’s smooth concrete benches, in a space with exposed brick walls, bird of paradise plants and loud music playing in the background, we opted for the Balagan tasting menu the day we went for lunch, brought over by staffers dressed in overalls. Served Tetris-style: traditional feta labneh perfectly seasoned with za’atar, radishes, black olives and mint; an unmissable cauliflower, eggplant and roasted garlic hummus; smoked baba ganoush with tahini and pomegranate seeds; and finally, a portion of jawaneh, aka chicken wings pimped out with garlic and dried cilantro. Followed by dessert, a stunning baklava that left us flabbergasted. // Aline Flamme
