After crisscrossing the markets of southwestern Brussels in her food truck for years, Carine de Backer has become something of a veggie goddess to healthy lunchers. It should be noted that her seasonal, locavore set menus, available in either vegetarian or vegan options, always pack a punch. Like so many others the day we went, we opted for the textural burger, featuring a golden patty made from grains, seeds, peas and curry, topped with melted gouda, tomato chutney, pickled red cabbage and baby spinach, all sandwiched between a bun from the Champain bakery in Wanze. But the one with quinoa, red beans and paprika also seemed to get the job done quite nicely… For both of them, you can always ask for a little added spice, and because Carine has your best interests at heart, pair them with the side of your choosing – raw red cabbage salad with five-spice powder, creamy red lentil dahl or an invigorating carrot, coconut and ginger purée the day we went. // Bobby Lapinte
