Defying gravity at Cosmos, the iconic century-old movie theater? That’s the ba(r)dass script written by the Troisième Souffle collective, who assembled a quartet of experts in crafting a good time, chef Maeva Colon (ex-Jour de Fête), Victor Hantz, Laelien Lecerf and Pierre Glista (from the In Vino Veritas galaxy), to dazzle both taste buds and retinas from the cobblestoned terrace to the long, carpeted hallway… The other night, without taking our eyes off the camp classic being screened behind the tinted glass: a hard-boiled egg topped with creamy mayo and fresh parsley, a timeless classic that’s anything but generic; tantalizing vegetarian empanadas as golden as a Palme d’Or, packed with ratatouille-like vegetables; original socca strips served with briny anchoiade, pickled mustard seeds, raw and roasted fennel; feel-good mac & cheese bubbling over, with a (somewhat too mild) cheddar and red kuri squash sauce, then baked with breadcrumbs on top; before a Bourdaloue tart with pears and a festival of dark chocolate chips. // Scotty Lard

FEELING THIRSTY? Around a hundred super-natural wines to choose from: a local crémant made by Patrick Geiger (€6 a glass), an Auxerrois by Yannick Meckert (€40 a bottle)… Along with craft beer on tap from Les Intenables de Rosheim (€4.20 for a half-pint) and regional cola (€3.50).
