After diving headfirst into the world of natural wine, Isabelle Bouvret continues to collect both bottles and years at her Barzing wine bar. Behind her vintage, zinc-topped bar, she serves a thirsty crowd in a cozy, candlelit space, its walls covered in feminist slogans to shake up the Jura region’s old-timers. Best of all are the local and regional wines uncorked for the people of Poligny, which might include: a savagnin ouillé from Valentin Morel that’s available on tap (€5 a glass); Le Blouge Qui Bouge, an impressive blend of seven different varietals by Éléonore Noël (€28 a bottle); Pur Jus, an Alsatian mix of sylvaner, auxerrois and riesling produced by Léo Dirringer (€16 a bottle)… and even a Barzing x Brasserie La Franche beer on tap (€3 for a half-pint), La Mortuacienne cola (€3.50 for 330 ml) and tomato-marigold juice bottled by Nos Jardins Imparfaits (€5 for 250 ml). Isabelle also keeps bellies happy with her cheese and charcuterie boards (€12) and her bistro-inspired lunch options (celery rémoulade and duck parmentier the last time we went, €16 for both). // Angela Dolu
