Vegan! No fake burgers or illusionist recipes here, simply the pure skill of Yolan Bamps (an ex-soldier) and Tekla Vancleynenbreugel (an ex-PR rep) as they showcase nature’s finest. In the virginal and vegetated dining room, we paired a rhubarb fennel spumante with some krupuk (a sort of fried cracker) and madras curry olive tapenade; followed by a smooth endive borscht topped with bamboo shoots, quinoa sprouts and lacto-fermented cabbage; tender and creamy soba noodles with banana flower tempura, a chili peanut sauce and some colorful mango sashimi; and a big up for the dessert – pistachio mousse served with a tangy kiwi jelly and a crisp tuile. // Cleo Popina
