Back in 2021, after leaving a career as a historian behind him, Tim Vos decided to open up this cave à manger complete with a back garden, all lit by candlelight at night. Keeping up appearances with the fermented grape juice gems, there are some heavenly porky goodies, like Iberian ham, top quality rillettes, rustic Ardennes pâté… and dishes in the spirit of the times, each accompanied by a wine suggestion: umami-packed oysters dotted with a yuzu condiment, olive oil and soy sauce; wagyu beef carpaccio with a zing of ponzu; cockles in a creamy dashi sauce; grilled Iberian pluma served with or without fries (not homemade, unlike the mayo); and classic desserts to seal the deal (chocolate mousse, Dame Blanche sundae). // Carlos Cotalosse
FEELING THIRSTY? A long list of safe bets (Ruinart Champagne at €128 a bottle, La Ragoze amarone at €86) and natural poisons, many of them by the glass – Optimbulles, a Belgian cuvée from Robijn (coincidental homonym) at €12, Testa di Ghiaca, an extremely rare and dry zibibbo from Bbirbiciù on the island of Pantelleria, or Le Thadee, a sagrantino from Carlo Re (both at €13).
