A former chef at Lenôtre, Mourad Maalaoui has turned the small Rue du Liban into his personal empire. At his two eateries (located at n°4 and n°9 of the same street) which look like normal kebab shops, fellow countrymen, local bobos and students all devour makloub, the Tunisian sandwich that’s typical of the Bizerte region. Cooked carefully in a pizza oven, the dough is made with wheat flour and semolina, has a golden color thanks to the addition of saffron, is flavored with spices and served as either a crepe or a soft turnover, stuffed with Tunisian salad, mechouia, Tunisian tajine (a sort of potato omelet) and your choice of herbed kefta, lemon-olive chicken, tuna or merguez sausages, for a 100% homemade treat. But that’s not all! Mourad also whips up other mouthwatering pizzas, like the Margherita, the four-cheese pizza, or the white pizza with mushrooms and onions… And if you’ve still got room afterwards, we suggest one of the lovely gazelle horn cookies made by Nesrine. // Thomas Jossin
