Here you’ll find meat maestro Yves-Marie Le Bourdonnec, who traded in his 14 Parisian butcher’s shops to be closer to his favorite farmers. Alongside the year-round restaurant, run by chef Francis Lévêque (ex-Apicius in Paris), the king of the Journal de 13 heures (an afternoon news program) dazzles diners with a set menu showcasing exceptional cuts of meat: incredible grilled bone marrow or melt-in-your-mouth beef salaté marinated for three days in lemon, coarse sea salt and pepper; prime rib that we’ll remember for a lifetime, barbecued and served with golden new potatoes; and a knockout cheese platter featuring local goat’s cheese, saint-nectaire and brillat-savarin. // Megan Linar
