Natasja (the chef) and Jan-Paul Delhaas (the sommelier) set themselves a challenge when they left Wink, their restaurant in Amsterdam, to take over this former co-op winery that’s been transformed into a wine bar by nine talented winemakers. At lunch the other day, in the space overflowing with bottles from both here and afar: memorable flash-seared squid on a bed of cucumber and leeks, smoked mushrooms, cilantro, peanuts, sesame seeds and a squid ink vinaigrette; very fresh grilled Mediterranean little tunny with beets, baby broad beans, sorrel and a red wine jus; before a delightful vanilla-caramel panna cotta snuggled up with a strawberry coulis.
