A smart move from Maxence Louis, who opened this finger-licking joint on a trendy street that’s the life and soul of the party. And the boss (who’s also behind Baci) sure knows how to get into the party spirit: a counter sizzling with smoke, rap music on the stereo, flaming-hot vibes… and, most importantly, cheeky burgers, where Ardennes beef double patties are “spratché” (that’s “smashed” in Walloon) and fit snug inside a pillowy soft potato bun. While the Classic more than gets the job done with all the basics (ketchup, mustard, onions and homemade pickles), it’s the Signature that really steals the show, packed with bacon caramelized to the max with sirop de Liège. Let’s not forget the Chopped Cheese either, which is also worth a shot, with pepper sauce and melted American cheese. Team no meat? No problem! The Veggie burger swaps the beast for a double halloumi patty which certainly wows the palate. To go with all that, fries loaded like in NYC, with a secret sauce whose recipe is kept safer than in Fort Knox, and oh-so comforting sides (crispy nuggets, coleslaw and hot cheesy croquettes). Pssst: the joint fires out its bangers up until midnight on the weekend! // Bianca Bernard
