Welcome to Mimi’s creamery! Officially known as Marianne Blambert, this Savoie native smartly traded in the world of tech for the universe of cheese at this neighborhood shop, where she provides the people of Rue Fondaudège with bold flavors – much like she did at the Fromagerie Goncourt, in Paris, where she first trained as a cheesemonger. Slip a selection of cleverly chosen cheeses into your basket, most of which come from independent farms that produce goods on a sustainable scale: high pasture Cantal, Mont d’Or aged for a minimum of 21 days on a spruce board in the traditional manner, Crottin des Pyrénées, summer beaufort made with milk from Abondance and Tarentaise cows, Savoie Emmental made with milk from Montbéliarde cows… In short, a true parade of terroir-rich cheeses, where you can also bring home a few lively bottles of biodynamic wine – including an organic Duras sauvignon blanc from the Domaine Mauro Guicheney, produced exclusively for the cheese shop. // Marcellin Caillou
THE HIDDEN GEM: The formidable farm-fresh Manigodine wrapped in a strip of spruce bark – a cross between reblochon and Mont d’Or – is an insanely creamy treat (€39/kg).
