In the game of real-life Monopoly, the Rondou family landed on Tripe Street and decided to put a butcher’s shop on their property. After Maurice, followed by his son Fernand, it’s now time for grandson Filip and his wife Siona to take the reins of this booming business, where a close-knit gang of Fred Perry-wearing merry men are busy butchering away. Here they’ve got a passion for pork (Duroc, Duke of Berkshire, Mangalica, Pata Negra), cut into steaks and chops, as well as some tasty charcuterie made in-house: salami, smoky bacon, ham on the bone, pig snout, Leuven pâté, tongue pastrami… not to mention an assortment of saucissons that are good in every way – free from any preservatives, food colorings or gluten-based thickening agents.
