Amid the shoe cabinets and Christmas decor in the month of March, we kinda feel like we’ve been invited into a messy grunge co-living space…. This is where Kris van Guyse, a member of Tāne Roasters Collective, grinds coffee with his wife Murielle Bosh and his barista Yassin Lamarti, himself a member of Tāne as well. The roaster juggles different varieties of beans and formats of coffee there, from full-bodied options (like the espresso of the moment) to gentler varieties (made using an AeroPress, for example). That particular day, we opted for a Brazilian Tibo from This Side Up, prepared as an americano, with fruity and chocolatey notes, sipped in a space with customers wearing either backpacks or suits and ties. For snacks, there are sweets sourced from the neighborhood (including yogurt with granola from BoerEnCompagnie) and a less impressive croque monsieur. // Aline Flamme
The hidden gem: The Ethiopian Gedeb with notes of jasmine and blueberry (€4.70 for a cup made with the AeroPress).
