There, in a Belle Epoque ambiance that’s been hit with a disco soundtrack, Matthew Long (ex-Ritz in London) offers up his famous absinthe-based cocktails — like the Parrots In Picardie (Four Roses bourbon, Saint-Reuil beer, absinthe, pineapple syrup and Coco López cream served in a glass jar, €12), and much more… Take, for example, the impressive Penny Black (Chivas, RinQuinQuin, Blanco Calle 23 tequila and Gentiane de Lure, €11). And the delicious mocktails including the Tropicalia (charred pineapple syrup, lime, beet juice, egg whites, tonic and passion fruit syrup). One regret: there was nothing to snack on. // A.B.
